Our garden shop is open next during easter of 2017
T he kitchen garden at The Yellow Hen is self-sufficient growing all the vegetables, herbs, berries and flowers the restaurant needs. We call our production “slow gardening”. Perma culture, care and diversity is part of our philosophy. We work with nature not against it. We take and we give. The beautiful produce from the garden is the building blocks of the tasting menus that we serve in our restaurant, including special crops that are no longer available from commercial farmers, that have been forgotten and revived.
A varm welcome,
Gardener Tina-Marie and the family
400 millions years ago the soils of our cultivation used to be coral reefs, this sedimented limestone gives an amazing force to the soil and its very own terroir. Our place has unique conditions and it can be noted in flavours and textures. The proximity to the Baltic Sea gives a mild climate and wild plants thrive, like lemon thyme, bitter-cress and sea sandwort are a part of our surroundings,
The tasting experience of the restaurant starts here, in the prosperous soil of our land. It also starts in the choise of older potato and vegetable types, unmodified, suited for our climate zone. Our crops are not fast growing, they are allowed to draw nutritients from teh soil and develop the register of flavours that the restaurant lifts.
We work without chemicals and artificial fertilizers because we strongly believe that they are toxic to us humans and all creatures that live with and around us. Above all we work according to our own convictions that biodiverity is our buffer and a possibility to reverse the effects of climate change.
The garden shop
In our little garde shop we sell thing we like. During april we sell both plants and seeds. Our selection is unique! Herbs, tomatoes, cucumber and flowers that smell good and attract pollinating insects. We offer no F1-hybrides, neither plants not seeds. We collect seeds from our own crops and in this case the F1-hybrides are unreliable. There is widespred concern that these hybrids lack pollen, a detriment to bumblebees and other insects.
In may we sell plants of tomatoes, cucumber, zucchini and chili. The seeds we buy and plant are also available, from Runåbergs, Impecta, Örtagården, Lindbloms and Prantensis. They have solid knowledge and work to select species with climate and flavour in mind. Some species have amazing flavour but might not have been suitable for mass production. We sell plants of cool flowers and a wide selection of kitchen herbs.
During the main season we stock up everyday with fresh produce from the garden. Flowers, vegetables, berries, and hebs.
The garden tour
Before enjoying a tasting menu in the restaurant you may come for a walk through the garden and experience the journey from soil to plate. During the summer of 2017 we will also offer guided tours in the day time!
For the kids
This summer (2017) we will open a planting corner for young and old curoius souls. More information soon!
The Hen Gang
When you visit us in the garden you might also run into our chickens, Ebba and the gang. Everybody in the gang likes to be offered food but they all dislike being chased around and stressed!
